These living cultural relics, roughly 1,500 years old, have been fermenting continuously since the Northern and Southern Dynasties. Old cellars make fine liquor β the older the cellar, the richer and more stable its microbial population, and the deeper, more layered the wine. This gift of time cannot be replicated by any modern equipment.
