Jiannan Shaofang is a series under the Jiannanchun Group, produced by Sichuan Mianzhu Jiannanchun Distillery Co., Ltd. From the Tang dynasty's history-book "Jiannan Shaochun" to today's Jiannan Shaofang No. 8 and No. 12 β€” the names have changed; the old cellars and the old craft never have.

I. From "Jiannan Shaochun" to "Jiannan Shaofang"

The brewing history of Mianzhu runs deeper than most imagine. As early as the Tang Dynasty, Mianzhu β€” then part of the "Jiannan Circuit" β€” had already mastered the brewer's art. Its wine was served at the imperial court and recorded in the Official History of the Tang under the name "Jiannan Shaochun" β€” the shared origin of today's "Jiannanchun" and "Jiannan Shaofang".

"Shaofang" is the old Sichuan term for a brewing workshop. By taking that name, Jiannan Shaofang pays homage to the tradition of family workshops and cellar-bound craft.

II. Old Cellars: Flavor Brewed by Time

There is a saying in baijiu: old cellars make fine liquor. The older the cellar, the richer and more stable the microbial community in its pit mud, and the fuller and more layered the spirit it produces β€” not mysticism, but the result of a century of microbial domestication.

Jiannan Shaofang's body comes from exactly such cellars: No. 12 is drawn from a cellar fermented continuously for 120 years; No. 8 from an 80-year-old cellar. The invisible microbial legions in that pit mud are these bottles' most precious asset.

III. Old Craft: The Ancient Way of Solid-State Fermentation

Jiannan Shaofang follows traditional solid-state fermentation, using water, sorghum, rice, glutinous rice, wheat and corn as ingredients, strictly honoring the old ways: solid-state fermentation in mud pits, repeated fermentation and distillation, then aging in clay jars until the spirit settles into harmony.

It inherits the quality and character of the Jiannanchun family, blended to suit today's palate β€” mellow on entry, balanced in aroma, clean on the finish: unmistakably Jiannan in style.

IV. The Golden Belt: Mianzhu at Latitude 30Β°N

Mianzhu sits on the golden brewing belt of latitude 30Β°N β€” a temperate, rain-rich latitude recognized as one of China's finest liquor regions and one of Sichuan's four great baijiu appellations. Rarer still, Mianzhu lies at the foot of the Jiuding Snow Mountains, whose glacier meltwater gives the brewing process a crisp, sweet source.
